Description

Mate (or yerba mate) is a drink obtained from the infusion of the leaves of Ilex paraguariensis, a native plant of South America belonging to the Aquifoliaceae family, arboreal or shrubby plants of warm areas that also include holly. It can grow up to 18 m in height, but in crops it is kept at a more accessible height. It is a unique species that grows spontaneously only in the north of Argentina, in Paraguay and in the south of Brazil and in some areas of Uruguay where there are particular pedoclimatic conditions without which the plant would not grow. It generally blooms between October and November, in the austral spring.
